Vanilla cheesecake with berries

The recipe for a summer cheesecake with vanilla, yogurt and fresh berries.


The basis:

● Chopped cookies 200g.,
● Butter 115g.


● Cream cheese 500g.,
● Mascarpone 150g.,
● Sugar 1 glass,
● Eggs 3 pieces.

Upper layer:

● Natural yogurt 1 glass,
● Sugar 1 tbsp.,
● Vanilla extract 1/2 tsp.,
● Berries for decoration.


The basis

Cookies crumble. Add the melted butter, mix well. Put the oil crumb into a mold and gently spread it with your hands, making a side about 3.5 cm high. Bake in a preheated 180 degree oven for 15-20 minutes. Cool down.


Beat cream cheese and mascarpone with a mixer at medium speed for 1 minute. Reduce the speed, gradually add sugar and whisk for 2 more minutes. Add eggs one at a time, each time mixing. It should be a homogeneous light mass.

Send the cheese mass to the form. Bake for 40-45 minutes, then take the cheesecake out of the oven and leave it on the grate for 10 minutes.

Upper layer

Prepare the top layer. Mix yoghurt, sugar and vanilla. Pour this mixture on the cheesecake, evenly spread over the surface. Leave the dessert for 2 hours at room temperature. Garnish with fresh strawberries and raspberries.
