The soup of zucchini with basil


Summer cream soup of young zucchini with chicken broth with basil, rusks and nutmeg.


● 4-6 young zucchini pieces.
● 2.5 cups chicken broth
● 200 ml cream
● Onion 1 piece.
● A few sprigs of green basil
● Olive oil 2 tbsp
● salt
● Nutmeg
● Rusks


1. On the heated oil fry the chopped onion until transparent. Fold in the pan, pour the broth, add chopped zucchini.

2. Bring to a boil, add salt and boil until tender zucchini about 10 minutes.

3. Beat blender soup with basil leaves. Pour in the cream and season with nutmeg and bring to a boil, dosolit to taste.

4. Pour the soup into bowls, garnish with greens. If desired sprinkle with rusks.
