The pumpkin bread with garlic and pepper.


Delicious home-made bread with pumpkin, garlic and hot chili pepper.


● Bread flour 450g.,
● Rye flour 50g.,
● 125ml water,
● Pumpkin puree 400g.,
● 7g of dry yeast,
● 4g malt,
● Sugar 1 tsp.,
● Coarse salt 2 tsp.,
● Garlic 4 cloves,
● Hot chili peppers 3 small pieces,
● 2-3 tablespoons vegetable oil,
● A handful of pumpkin seeds.


1. Dissolve yeast in 30 ml of water and added sugar. Let stand for 10-15 minutes.

2. Cut the garlic for a few cloves, pepper, too, cut into several pieces.

3. On low heat in a small saucepan, heat the vegetable oil. Add the garlic and pepper with seeds. To warm up a few minutes to allow the oil absorbed the garlic and pepper taste. Cool and strain.

4. Mix the yeast with the remainder (100 ml), warm water, add pumpkin puree, malt and mix well.

5. Parts of sifting flour (bread and rye) in the pumpkin mixture, knead a soft, elastic dough. Add the salt and the end oil. Knead for 10-15 minutes.

6. Roll the dough into a ball and place in a greased bowl, cover with foil and allow to come in a warm place for an hour or until the dough has doubled.

7. Form a loaf of dough and lay out on a floured baking sheet, cover with a towel and let go for about 30 minutes, until the dough will not rise. The surface of the dough as desired sprinkle with pumpkin seeds.

8. Preheat oven to 230 C. Put on the bottom of the oven dishes with cold water. Bake the bread 7 minutes, then lower the temperature to 210 C oven for 25-30 minutes.
