Summer pie made of puff pastry with vegetables

Original summer pie made of puff pastry with eggplants, onions, beets, tomatoes and arugula.


● Puff pastry — 1 package,
● Cheese — 100g.,
● Small beet — 1 pc.,
● Eggplant — 1 pc.,
● Onions — 1 pc.,
● Cherry tomatoes — 100g.,
● Οlives — 10 pcs.,
● Arugula — 1 beam,
● Salt, ground pepper to taste.


1. Defrost the puff pastry and roll it into a rectangle. Form the sides and sprinkle abundantly with grated cheese.

2. Top with thinly sliced eggplants and onions. Cut the beets and cut into small cubes, spread over the eggplant.

3. To send in an oven heated up to 180 degrees and bake until golden brown, about 30 minutes.

4. To lay out the olives without pits, cut in half cherry tomatoes and rukkola. Sprinkle with salt and ground pepper.
