Spicy Salmon Baked in Foil

Spicy Salmon Baked in Foil

Very simple and delicious, and most importantly, a quick recipe for baked salmon in foil. The dish will turn out amazingly fragrant, juicy and with a pleasant sourness, and all this thanks to the addition of tomato sauce and freshly squeezed lemon juice.

• Salmon fillet — 4 pcs.,
• Olive oil — 4 tsp.,
• Salt and ground black pepper,
• Tomatoes (cut into slices) — 3 pcs.,
• Onions shallots (grind) — 2 pcs.,
• Fresh lemon juice — 2 tbsp.,
• Dried oregano — 1 tsp.,
• Dried cumin — 1 tsp.

1. Preheat the oven to 200°C or 400°F degrees.
2. Lubricate the salmon fillet with two teaspoons of olive oil, season with salt and pepper. In a separate bowl, whisk (with a blender) or simply mix well: tomato slices, chopped onions shallots, remaining olive oil, lemon juice, dried oregano, cumin, salt, and pepper.
3. Put the fillet, oiled side to the bottom, on top of the pieces of foil. Wrap the edges of the foil so as to get a semblance of a plate. Spoon, evenly distribute the tomato mixture over the fillets, you need to completely cover each piece. Now, completely wrap the fish with foil and move it to the baking sheet. Bake in the oven for 25 minutes, or until the fillet is completely baked.
4. When it is ready, with the help of a spatula, lay the fish, directly in the foil on the plates. Serve to the table.

Bon Appetit!!!
