Semolina Cake with Cottage Cheese and Buttermilk

Cottage cheese for cooking semolina cake should not be too wet (in this case it will need to be pre-pressed), but not dry.


● Semolina — 1.5 cups,
● Flour — 2 tbsp.,
● Sugar — 1 cup,
● Eggs — 2 pcs.,
● Buttermilk — 250 ml.,
● Cottage cheese 5% — 150g.,
● Butter — 70g.,
● Baking soda or baking powder — 1 or 2 tsp.


1. Mix the softened butter together with sugar. Add eggs, beat thoroughly.

2. Add buttermilk and cottage cheese to the mixture, whisk until smooth.

3. Then add semolina and flour, sifted with soda, again whisk thoroughly. Leave for half an hour to allow the dough to swell.

4. Transfer the dough into a greased form and bake at 175 C for about 30 minutes. Willingness to check with a toothpick.

5. Before serving, cool and sprinkle with sifted sugar powder.
