Schwarzwald Cherry Cake or Black Forest Cake

Schwarzwald cherry cake or black forest cake — is a favorite cake with an impeccable combination of cherries, chocolate biscuit and cream.


Cake layers with a diameter of about 20 cm:
● 6 eggs
● 120 grams of sugar,
● 120 grams of flour,
● 1 teaspoon baking powder,
● 3 tbsp. cocoa,
● 60 grams grated chocolate.

● 600 ml cream 33-35% fat content,
● 500g cherry (fresh or thawed),
● 120 grams of powdered sugar,
● 2 teaspoons of vanilla sugar.

● 4 tbsp brandy (whiskey or cherry liqueur),
● 1 teaspoon cinnamon,
● 3 tbsp. sugar.

Ground chocolate, cherries.


Separate the proteins from egg yolks. Mix the yolks with sugar and 2 tablespoons of warm water.
Whisk the proteins until soft peaks separately and gently mix with the yolks.
Sift flour with cocoa and baking powder. Add to the egg mixture.
Add grated chocolate (in the original it is suggested to add 60 grams of ground almonds, but I did not have it, so I did without it).
Pour the dough into a greased baking form and bake at 180C for 30 minutes (check with a stick). Finished cake to cool, cut into 3 parts.

From cherries remove the bones, collect the juice, merge it into a sauté pan, add sugar and cinnamon. warm up to dissolve sugar, add alcohol.
Saturate with warm syrup cakes. Beat cream with sugar and vanilla.

Put half the cherries on the bottom cake, cover with cream so that the cream is between the cherries.
Lay the second and third cakes and repeat the operation. Lubricate the remnants of the cream side and top, decorate with chopped chocolate.
According to the rules, we must give the cake to stand in the refrigerator for a couple of hours, but we could not stand it and started eating:)
