Russian Salad “Olivier” with quail eggs.


Original Olivier salad recipe for any occasion with quail eggs, meat, fresh-frozen peas and baked vegetables.


● Potatoes 2 pcs.
● Carrots 2 pcs.
● Fresh cucumbers 2 pcs.
● Pickled cucumbers 2 pcs.
● Frozen green peas 1/3 cup.
● Boiled veal or tongue, 200g.
● Quail eggs 8 pcs.
● 3 stalks green onions,
● Mayonnaise 2 tablespoons,
● 2 tablespoons sour cream,
● Salt and pepper to taste.


1. Potatoes and carrots are well washed, wrap in foil and bake until tender.
Cool and clean.
2. Quail eggs to boil for 5 minutes, dipped in cold water.
3. Peas defrost in advance.
4. Chop potatoes, carrots, meat, eggs and cucumber cubes of the same size. Green onions chop.
5. All mix, sour cream and mayonnaise and spice to taste.
