Potato Gnocchi with Cherry Tomatoes

Italian potato dumplings with cherry tomatoes, greens and sour cream.


● Potatoes 1 kg.,
● Parmesan cheese 100g.,
● Eggs 3 pcs.,
● Flour 300g.,
● Butter 3 tbsp.,
● Cherry tomatoes 4 pcs.,
● Greens to taste.


Peel potatoes, boil until readiness in salted water, cool. Grate the cheese on a fine grater.
Make a mash — potatoes carefully stretch, in the center to make a hole. Pour eggs into it, add a little flour, add 50g. of cheese and knead the dough without lumps. Gradually add the remaining flour. The dough is soft, it should not stick to your hands.

Divide the dough into several pieces and roll the sausages 2 cm thick. Cut into small pieces. From each piece roll a ball, with a fork, apply the pattern crosswise.

Boil gnocchi in boiling salted water in small portions until it emerges, about 2 minutes.
Lay out with a skimmer on the dish, if desired, pour with melted butter and sprinkle with the remaining cheese. You can serve with cherry tomatoes, sour cream and greens.
