Pistou by Greek.


Recipe for vegetable stew of eggplant, sweet peppers, tomatoes, potatoes and zucchini.


● Eggplant 2-3 pcs.,
● Bell peppers 2 pcs.,
● Zucchini 2 pcs.,
● Small potatoes 5-6 pcs.,
● 3 garlic cloves,
● Oregano to taste,
● Thyme to taste,
● Bay leaf to taste,
● 5 tbsp olive oil,
● Ripe tomatoes 2-3 piece.,
● 250g feta,
● Salt and freshly ground pepper to taste.


Vegetables Wash, peel if necessary and cut into fairly large slices. Drizzle with olive oil, sprinkle with herbs and mix well.

Put the vegetables in a container for baking. Cook at 180 degrees 40-50 minutes. Then sprinkle with crumbled cheese and cook another 10 minutes. Cool slightly and serve.
