Parisian Flan without Dough (French Custard Pie)

The preparation of this traditional Parisian flan requires patience and some skill, but the result is worth the effort. Be sure to try this tender dessert without dough.


● Milk — 500 ml or 2 cups (50 cl)
● Cream — 250 ml or 1 cup (25 cl)
● Sugar — 125 grams or 0,27(lb)
● Egg yolk — 6 pcs.
● Cornstarch — 50 grams or 0,11(lb)
● Butter — 10 grams or 0,02(lb)
● Flour — 1 tsp.


1. Pour milk and cream into the saucepan, and bring to a boil.
2. At this time, beat the egg yolks with sugar and cornstarch.
3. In the received mass gradually to pour hot milk with cream, continuing to whip.
4. Pour the cream back into the saucepan and cook for 30-40 seconds, stirring constantly. Remove from heat and cover with a food film so that it touches the cream. Allow the cream to cool completely.
5. Cover the baking sheet with parchment paper and place in the center a culinary ring, greased with butter and sprinkled with flour.
6. Beat cold cream and put it in the culinary ring. Bake in preheated oven to 180°C or 356°F for 35 minutes. Allow the flan to cool completely before removing the ring.
