Meat Pie "Chrysanthemum"

The recipe for the Chrysanthemum pie with minced meat stuffing … It’s also good to add a bit of grated cheese to the filling, so it will be much tastier.


Minced meat (pork, beef) — 500g.,
Onions — 1 pc.,
Garlic 1 clove,
Water — 100 ml.,
Cube of chicken broth — 1 tsp.,
Cheese — 140g.,
Butter — 30g.,
Salt, red and black pepper — to taste.

For the dough:

Milk — 125 ml.,
Kefir — 125 ml.,
Dry yeast — 1 sachet (7g.),
Sugar — 1 tbsp.,
Salt — 1 tsp.,
Egg — 1 pc.,
Flour — 500g.,
Vegetable oil — 6 tbsp.


In the milk, dissolve the yeast, add the sugar and set aside for 15-20 minutes to make the yeast come to life.
Mix milk, kefir, sugar, salt, egg, vegetable oil. Stir well, add the yeast, sifted flour and knead the soft dough. Cover the bowl with the test with a film and put in a warm place for about 1 hour. Then dough the dough and divide into two equal parts.
One part should be removed again in a bowl and covered with a kitchen towel.
The second part of the test is rolled into a layer 3-4 mm thick (the table is sprayed with flour if necessary).
Squeeze a mug from the dough (I have a diameter of 7.5 cm). Remove the remainder of the dough, crumple it, roll it out again and squeeze out the mugs. Then cover the blanks with a film so that they do not dry out.
Spread evenly 1 tsp on a round spoon. minced meat (full), a pinch of cheese. Fold it in half.
Then again in half. The tips are slightly pinched from below.
Place the workpieces tightly to each other in a mold (diameter 28 cm).
The form should first be greased with vegetable oil, then put the baking paper on the bottom and oil it too (thus it will be easy to select the cake from the mold).
When all the roundworms are used, go to the second part of the test and in the same way act as the first one.
For the middle, take 3 halves from the rounds to spread with minced meat. Put the halves in overlap on each other. Roll the roll, starting from the bottom and lay in the middle of the pie. Cover the form with a film and allow time for proofing, approximately 20-30 minutes.
Lubricate the top with a slightly whipped mixture: 1 egg yolk + 1 tbsp. milk.
Bake in a preheated oven at 180 ° C, about 35-40 minutes, in the middle of the oven (15 minutes before the end of baking, lower the temperature to 175 ° C).
Finished cake grease with melted butter (30 g) and cover with a towel for 15 minutes.
