Lemon Cake without Flour

The recipe for a cupcake without flour with ground almonds, boiled lemons and cream from cream cheese. Serve it with a cup of strong coffee.


● Lemons 2 pcs.,
● Peeled almonds 150g.,
● Eggs 3 pcs.,
● Sugar 150-200g.,
● Baking powder 3g.,
● Vanilla sugar 5g.

For cream and decoration:

● Cream cheese 270g.,
● Fatty Cream 50 ml.,
● Sugar powder 50g. or to taste,
● Vanillin pinch,
● Lemon peel and mint for decoration.


1. Clean lemons, pour a large amount of water and cook until soft, about an hour and a half. Then cool, cut in half and remove the stones.

2. Grind almond with a blender or a coffee grinder.

3. A plug-in shape with a diameter of 15-16 cm oiled and covered with baking paper. Oven to warm up to 180 degrees.

4. Cook boiled lemons with a blender in a homogeneous puree. Add ground nuts, whipped eggs, baking powder, sugar and vanilla, whisk.

5. Put the dough into the prepared form. Bake the cake for about 50 minutes.

6. Carefully get the lemon cake from the mold, remove the baking paper and cool it on the grate.

7. Prepare the cream. Mix with a whisk cream cheese with cream, powdered sugar and vanilla, put on the surface of the cake. Put for 2 hours in the refrigerator before serving. If desired, decorate the cake with lemon zest and mint leaves.
