Khachapuri (Georgian Cheese Bread)

Khachapuri is a Georgian bread with cheese. Khachapuri are different round, triangular, oval, in the form of a boat.


● Kefir — 1 cup,
● Soda (extinguished with vinegar) — 0.5 tsp.,
● Salt — 0.5 tsp.,
● Sugar — 0.5 tsp.,
● Flour (in the dough) — 2.5 cups,
● Flour (for work with the dough) — 0,5 cup,
● Curd — 200g. or 0.44092 Pound (lb)
● Cheese hard — 120-150g.  or 0.26455-0.33069 Pound (lb)
● Garlic — 2 cloves,
● Refined sunflower oil — for frying.


1. Measure out the desired number of products.
2. First, prepare the dough for khachapuri. To do this, put yoghurt, salt and sugar in the kefir, stir it with a whisk.
3. Pour the sifted flour in pieces, do not stop working with a whisk until the dough becomes dense.
4. Transfer it to the table with flour, knead the dough. Put it in a bag or wrap it in a food film and leave it for 15-20 minutes.
5. For the filling: take any hard cheese, grate it on a fine grater. Add the cottage cheese, a pinch of salt, two cloves of garlic, passed through the press. Stir well the filling. You may think that it is difficult, it is thick and dry, but after a few minutes a dense fragrant mass will turn out. Divide into 4 parts stuffing.
6. Divide the dough into 4 parts. Roll each part thinly, about 5 mm. And then there are two options for modeling: you can make ordinary pies or chebureks. Put the filling on the edge of the dough, gently distribute.
7. Cover with the second half of the dough, the edge is dazzled tightly. Take care that there is not much air inside. Hands tighten or rolling a little roll out the finished patty.
8. In a frying pan, heat half a cup of oil, put two patties and fry until a crust is brown.
9. Turn over the blades and fry on the other side.
10. Khachapuri are ready! Help yourself.
