How to cook a chocolate cake without flour.


This biscuit base for the cake is prepared without the addition of flour. Instead, it uses ground almonds.


● 100g almond flour,
● 80g sugar (20g whipping protein),
● 20g cocoa powder,
● 3 whole eggs + 3 egg whites,
● 5g of invert syrup.


1. In a bowl place the whipping sifted almond flour, to sift the powdered sugar, add eggs and a bit invert syrup. Mix until a uniform light weight, stirring for 4-5 minutes.

2. Beat whites. When you see the foam, add the sugar in a thin stream, not stop beating. Continue whisking already with sugar until thick air foam.

3. Add a third of the protein to almonds, gently but thoroughly to intervene. Then sift cocoa cup, then add the remaining proteins.

4. The resulting dough is spread on a baking sheet, the laid paper baking. Slightly flatten the dough with pastry spatula.

5. Send the a baking sheet in the oven, preheated to 200ºC. Biscuit centimeter height is somewhere baked 10 minutes. Willingness to check toothpick or skewer.
