Honey Cake with Prunes and Nuts

Appetizing and delicate honey cake is a dessert that has gained popularity in many countries.


● Prunes — 200g.,
● Flour — 400g.,
● Eggs — 5 pcs.,
● Honey — 3 tbsp.,
● Granulated sugar — 300g.,
● Baking soda — 1,5 tsp.,
● Sour cream — 500g.,
● Fatty cream — 150g.,
● Walnuts — 200-250g.


1. Sift the flour and combine it with soda.

2. Eggs beat the mixer at high speed for 4 minutes. Add 200g. of sugar and whisk again until smooth (about 3 to 4 minutes). Pour in honey and whisk at a moderate speed for another minute.
3. Add small amounts of flour with soda, whilst continuing to whisk at minimum speed.
4. Preheat the oven to 160 degrees. Cover the pan with baking paper and pour half the dough. Bake for 35 to 40 minutes. In the same way bake and the second layer.
5. Prunes wash and pour boiling water for 10 — 15 minutes, then cut.
6. Mix the cream with a mixer until the peaks appear. Add sugar with sour cream and whisk until smooth.
7. Cut the layers along in two parts, so that you get 4 roughly equal in thickness thin layer. Lubricate the bottom with cooked cream.
Then put a little prunes, sprinkle with chopped nuts and cover with a second layer. Do the same with the rest of the layers. The last layer is decorated with whole nuts and prunes.
8. Leave the cake in a cool place for 3-4 hours soaked with cream.

Serve for tea or coffee!
