Homemade Philadelphia Cream Cheese

How to make homemade Philadelphia cream cheese from milk and buttermilk.


• Milk — 1 L or 4 cups,
• Buttermilk — 500 ml or 2 cups,
• Chicken Egg — 1 pc.,
• Salt — 1 tsp.,
• Citric Acid — Pinch.


1. Pour the milk into the pan and set it on the stove over medium heat. Constantly stirring, add salt and bring to a boil.
2. Immediately after boiling, add kefir and mix until the mass is curled. Put this mass on gauze, then hang gauze with mass above the sink for 15 minutes to allow the serum to drain.
3. Beat egg and some citric acid well. Add the resulting cottage cheese to the beaten egg and beat again until a homogeneous fluffy mass is obtained. Cheese is ready.
