Georgian Meat in the Oven

Georgian cuisine is famous for meat dishes, their variety, delicate taste, excellent ways to prepare meat for cooking, seasonings and sauces.

A simple recipe from House Recipes will help you prepare a Caucasian dish at home without any problems. The same method of marinating meat is suitable for kebabs.

Any meat is suitable for cooking meat in Georgian: beef, pork, lamb, rabbit, poultry and, of course, a lot of herbs and spices, as is customary in Georgia.

To make this tasty dish, use the following products:


• Any meat (pulp) — 1 kg. or 2,20(lb)
• Honey — 2 tbsp.
• Lemon juice — 1 tbsp.
• Sour cream — 1 tbsp.
• Salt, pepper and other spices — to taste
• Fresh greens: dill, parsley, rosemary, cilantro, basil — the amount to taste.


1. Cut the meat into large pieces (larger or smaller — to your taste.)
2. Greens (it is desirable that all five species are present) finely chop and mix.
3. Mix the meat with herbs, squeezed lemon juice and honey.
4. Salt, add other spices (optional), and mix everything thoroughly.
5. Put the mixture in the fridge for 2-3 hours to marinate the meat.
6. Remove the meat from the fridge, add sour cream, mix well and place on a baking sheet.
7. Bake the meat in a well preheated oven for about 45 — 60 minutes. The baking time depends on your oven, the quality and size of the pieces of meat. Rely on your experience and taste, check the readiness of meat more often.
8. If the meat is overexposed in the oven, it will be drier. If you like meat with blood — reduce the cooking time.
9. Serve the finished meat with rice, potatoes or your favorite side dish.
