French pie with potatoes and herbs


Cooking spring pie of shortcake dough with potatoes, cheese, green onions and a creamy egg filling.


For the dough:

● 225g. flour,
● Cold oil 140g.,
● Salt,
● 1 tablespoon powdered sugar,
● Egg yolk 1 pc.,
● Water or milk 3 tablespoons,

For filling:

● Peeled boiled potatoes, sliced 250g.,
● Green onions, sliced large bunch,
● Grated cheddar cheese 250g.,
● Eggs 5 pcs.,
● 100 ml milk,
● Fatty cream 200 ml.,
● Salt,
● Spice.


1. Sift the flour and a pinch of salt in a large bowl. Add the chopped butter and rub hands into crumbs.

2. Add the powdered sugar, egg yolk and 3 tablespoons cold water, knead the dough. Roll it into a ball and place in refrigerator for half an hour.

3. Preheat oven to 200 C. Roll out the dough on a floured surface, put in shape with a diameter of 23 cm, to form a rim. Cover the dough with parchment paper and pour the load (dry peas or beans). Bake for 20 minutes, then remove the paper and load and cook for 5-10 minutes.

4. Remove the cake from the oven and reduce the temperature to 160 C.

5. Fill the basis of potatoes, onions and cheddar. Beat the eggs, milk and cream and season. Pour on top of the filling.

6. Return the tart to the oven and bake for 40-45 minutes. Before serving, chill.
