Eggplant Rolls with Cheese

This is a very delicate appetizer, which will decorate any festive table. Eggplant rolls with cheese — simple and quick cooking recipe at home.


● Large eggplant — 1 piece,
● Melted cheese — 100 Grams,
● Egg — 1 piece,
● Garlic — 1 clove,
● Salt — to taste,
● Ground black pepper — to taste,
● Mayonnaise — 1 teaspoon,
● Vegetable oil — 2-3 tbsp. l (for frying).


1. Wash the eggplant and cut the tail. Egg boil hard. Cool and peel.
2. Cut the eggplant along into thin leaves. It is better not to salt before frying, otherwise they will shoot in a frying pan.
3. Fry the eggplant leaves on both sides in vegetable oil until soft.
4. Prepare the filling for rolls. Combine in a plate a grated cheese with egg and garlic. Add salt, ground black pepper and mayonnaise. Stir until homogeneous.
5. Ready eggplant can be salted. For each sheet of fried eggplant, put the stuffing. Wrap with a roll.
6. Decorate the finished rolls with greens and serve warm to the table.
