Eggplant fan with tomatoes and cheese

This beautiful summer snack from aubergines is also called «Peacock Tail». You can add the inside cut into thin rings of onions.


● Eggplant 1 pc.,
● Tomato 1 pc.,
● Green basil 1 sprig.,
● Circassian cheese 100g.,
● Salt, pepper to taste,
● Vegetable oil to taste.


1. Eggplant should be washed and cut along thin slices, not reaching the end.

2. Dip for 10 minutes in salted water, then remove from it and dry. Lubricate the surface with oil.

3. Cut the tomatoes into slices, cut the cheese into slices.

4. Open the eggplant fan and lay a tomato, cheese and basil on each strip, sprinkling salt and pepper to taste.

5. Put the eggplant fan in a mold and bake until soft in a hot oven.
