Christmas cake with cranberries and sour cream.


Christmas cake from pastry with cranberries and sour cream. Fill the cake in this winter like a custard.


For the dough:

● 200g flour,
● Soft butter 90g.,
● Caster sugar 40g.,
● A pinch of salt,
● Lemon zest 1 tsp.,
● Egg 1 pc.

For filling:

● Cranberry 200g.,
● 200g sour cream,
● 95g sugar,
● Vanilla sugar 5g.,
● Eggs 2 pcs.,
● 1 tablespoon cornstarch with slide.


1. Mix all ingredients for the dough, knead. Hide the finished dough into a ball and place in refrigerator for half an hour. Preheat oven to 180 degrees.

2. The dough is put into a mold of 24 cm, to form a rim. Cover with paper, fill weight (dry peas or beans) and bake at 180 C for 10-15 minutes. Then remove the load.

3. For filling cream mix, sugar, vanilla, egg and starch. Fill the base cranberries, pour the cream on top.

4. Bake for about 40 minutes, until the filling thickens, and the dough is golden.

5. Ready cake to cool to room temperature and place in refrigerator for 1-2 hours.
