Chocolate Pie with Berries

Loose pie with a crispy crust with chocolate icing and fresh berries.


● Black chocolate 75g.,
● Egg proteins of room temperature 4 pcs.,
● Sugar 175g.,
● Flour 75g.,
● Cocoa powder 25g.,
● Boiling water 150 ml.,
● Berries 150g.,
● Black chocolate for glaze 80g.,
● Boiling water for glaze 80 ml.,
● Fresh berries for decoration 125g.


Preheat the oven to 185 degrees. Sift flour. The bottom of the demountable form with a diameter of 20 cm is covered with baking paper, grease the sides with vegetable oil.

Prepare the Pie. Chopped chocolate, cocoa, 150 grams of sugar, pour boiling water. Stir until the mass is uniform. With a mixer, whisk the proteins into a thick foam, gradually adding the remaining sugar. Add the sifted flour to the chocolate mixture, mix thoroughly.

Add a quarter of the whipped proteins to the chocolate mixture, mix, add the remaining proteins, gently mix. Pour the dough into the prepared form, from above to spread the berries, lightly pressing them into the dough. Bake in the middle of the preheated oven for 30-35 minutes. Get the form out of the oven, remove the sides and let the pie cool completely.

Prepare the glaze. Chop the chocolate, pour boiling water, mix until smooth emulsion is obtained. Transfer the cooled pie to a serving plate, pour on the chocolate icing and decorate with fresh berries.
