Cheesecake with raspberries and blueberries

Summer cheesecake without baking on gelatin is prepared with the addition of fresh raspberries and blueberries.


● Sugar cookie 70g.,
● Coconut chips 1/3 cup,
● Melted butter 70g.,
● Cream cheese 375g.,
● Fat cream 1/2 cup,
● Sugar 1/3 cup,
● Boiling water 2 tbsp.,
● Gelatin in powder 2 tsp.,
● Raspberry 150g.,
● Bilberry 150g.


1. Cover the bottom and the sides of the split form with a diameter of 20 cm with parchment paper.

2. In a blender, beat the cookies, coconut shavings and ghee until the crumb is formed. Strain the mixture on the bottom of the mold and put it in the fridge while the filling is being prepared.

3. Mix the creamer cheese, cream and sugar with a mixer until a homogeneous mass is obtained. Pour gelatin with hot water to dissolve. Add to the creamy mixture and beat.

4. Add half of the berries to the cream, gently mix and lay on top of the base. Decorate with the remaining berries.

5. Cover the cheesecake with a plastic wrap and put in the refrigerator for at least 4 hours.
