Cheesecake New York

Classic cheesecake New York is prepared on the basis of cream cheese. Initially, this is Philadelphia, but you can use mascarpone and other cream cheese.


For the basis:

● Butter — 85g.,
● Sugar cookies, crumbled — 140 grams,
● Sugar — 1 tbsp.

For filling:

● Philadelphia cheese — 900g.,
● Light brown sugar — 250g.,
● Flour 3 tbsp.,
● Vanilla extract — 1 1/2 tsp.,
● Grated lemon peel — 2 tsp.,
● Lemon juice — 1 1/2 tsp.,
● Eggs — 3 pieces,
● Egg yolk — 1 pc.,
● Sour cream — 200 ml.

For the top layer:

● Sour cream — 225g.,
● Light brown sugar — 1 tbsp.,
● Lemon juice — 2 tbsp.


1. Preheat the oven to 180 ° C. Fold a demountable baking dish with a diameter of 23 cm with parchment paper.

2. Prepare the base. Melt the butter in a medium saucepan. Add sugar, cookie crumbs and mix. Rinse the mixture into a mold and bake for 10 minutes. Cool on the grate.

3. Increase the temperature in the oven to a fan of 200 C. Beat soft cheese at medium-low speed for about 2 minutes. Gradually add sugar, then flour and a pinch of salt.

4. Add vanilla, lemon zest and juice. Add the eggs and yolks, stirring the whisk. Then add sour cream and stir until smooth.

5. Lay the cream on the base and level it. Bake for 10 minutes. Reduce the temperature to 110 C and cook for another 25 minutes. Turn off the oven and open the door. Cool the cheesecake in the oven for 2 hours.

6. Mix the sour cream, sugar and lemon juice for the top layer. Cover this mixture with cheesecake.

7. Cover the cake and put it in the refrigerator for the night. Serve cheesecake with strawberry sauce.
