Azerbaijani Qutabs with greens

Qutabs with greens — Azerbaijani tortillas, in the filling of which a variety of greens are used. This is a useful and tasty dish from very simple products.


● Vegetable oil — 1 tbsp.,
● Ghee or butter — 1 tbsp.,
● Butter (for serving) — to taste,
● Salt — to taste,
● Sumac — optional,
● Medium onion — 1 pc.,
● Flour — 3 cups,
● Flour (for powdering),
● Any greens (green onions, coriander, tarragon, dill, parsley, spinach, chard) — 400g.


1. For the dough, sift the flour into a bowl, add a pinch of salt. Gradually kneading, pour mixed with vegetable oil water at room temperature, to get a not too steep dough. Cover it with a towel and leave for 30 minutes.

2. For the filling, peel and finely chop the onion. In a frying pan, heat the butter, put the onion and simmer on low heat until soft, stirring, so that the onion almost does not change color, about 7 minutes.

3. Meanwhile, cut thinly the greens, removing the hard stems. Put the greens in a frying pan with the onion, mix and remove from the heat. Season the filling with salt, cool.

4. Divide the dough into 15-18 parts. On the surface sprinkled with flour, roll each piece into a very thin cake, almost transparent (roll the flat cakes under a thick towel or under a film so that they do not dry). Put on a medium fire a dry frying pan with a thick bottom.

5. On half of each flat cake lay out the filling, cover the second half and carefully press the edges. The filling should be distributed throughout the whole Qutab with a thin layer, and the edges must be very narrow (excess dough can be cut off).

6. Portions fry qutabs on a dry, well-heated frying pan for about 1.5 minutes on each side. Put ready qutabs in a preheated bowl, immediately lubricate with butter and keep under the lid. Serve hot or warm, if desired, sprinkled with sumac.
