Apple Charlotte with Spices

A tender apple charlotte is an excellent treat at any time of the year.


• 6 green apples,
• 1 lemon,
• 4 eggs,
• 200 grams or 0,44(lb) of fine sugar,
• 200 grams or 0,44(lb) of sour cream with a fat content of 25-30%,
• 60 grams or 0,13(lb) flour,
• 100 grams or 0,22(lb) of semolina and a little more for sprinkling,
• For 1 tsp. ground cinnamon and ginger powder,
• 2 tsp. baking powder,
• Pinch of salt,
• Butter.


1. Generously grease with butter the deep mold for baking with a diameter of 24-26 cm. Sprinkle a little of the semolina, distribute evenly. Erase the zest of the lemon, squeeze the juice. Peel apples from peel and core, cut into large cubes. Mix with lemon juice and put into a mold.
2. Mix the zest with semolina, flour, baking powder, cinnamon, ginger powder and salt.
3. Whisk the eggs with sugar into a thick foam. Gently add the sour cream, then pour the dry mixture. Stir until homogeneous. Pour the dough into a mold with apples.
4. Preheat the oven to 200°C or 392°F. Put the mold in the bottom third of the oven, bake the charlotte for about 40 minutes. Serve warm or cooled.
