Meat Pasties Recipe

Pasties are obtained with a crunching crust thanks to VODKA in the dough and soft inside. Very tasty!

Ingredients:

• Flour 4 cups,
• Water — 320 ml or 1.3 cups,
• Vodka (required) — 2 tbsp.,
• Egg — 1 pc.,
• Vegetable oil (for the dough) — 2 tbsp.,
• Salt — 0.5 tsp.,
• Mince (for the filling, I take ready pork) — 700-900 grams or 1,54-1,98(lb),
• Onion (for filling) — 2 pcs.,
• Ground black pepper to taste (for filling).

Directions:

1. Boil the water by adding salt and vegetable oil.
2. Immediately add ½ cup of flour to the boiling water, stir thoroughly so that there are no lumps and allow this mass to cool. I stirred with a whisk.
3. Next, add the egg and vodka, mix and gradually add the rest of the flour. Knead dough well. The dough should not stick to your hands, otherwise add a little more flour. Set dough aside.
4. After 30 minutes, knead again and leave for another 30 minutes.
5. After time — the dough is ready, you can make the pasties. You can make the dough in advance and, wrapped in a plastic bag, put in the refrigerator for 1 or even 2 days. The dough makes it even better.
6. At this time, prepare the minced meat — peel the onions and skip through a meat grinder.
7. Add salt and freshly ground pepper to it, mix well, you can add fresh parsley or cilantro.
8. Cut the dough the size of a tennis ball, and roll out with a rolling pin into thin flat cakes.
9. Put the minced meat on the cakes (about 1.5-2 tsp), flatten it on one half of the cakes, cover with the second half and press down the edges, squeezing out the air. Edge well close up.
10. Fry pasties in a deep fat fryer or in a saucepan.

NOTE:

If I do not have a fryer, then I pour vegetable oil (a lot) into a thick-walled frying pan and heat it.
Then I drop 2 pasties, diminish the fire, and they roast on one side until golden brown, then I turn them over. And so on, in such a sequence.
Chebureks are roasted over medium heat from 2 sides to golden brown in a large amount of oil.
Spread ready pasties on paper towels to remove excess fat. Serve hot.
