Cooking with Jackfruit

If you are not too fond of complex dishes, then just rinse the young fruit (to remove the salt) and marinate it to taste — with a barbecue sauce, butter or vinegar for 30 minutes and fry. You can make a jackfruit on the grill or make a real shish kebab with your favorite seasonings. Another option: chop or cut the fruits and cook with them paste.

All recipes with which we introduce you, use young immature fruits. If you have a canned jackfruit, it should be properly dried. To remove excess salt, the pulp is pre-washed. Frozen jackfruit must be thawed before use.

Spicy cutlets from Jackfruit

2-3 servings

Here the basic recipe is suggested, it can be varied with dried or fresh herbs and spices of your choice.

Ingredients:

● 200 grams of young jackfruit,
● 200 grams of boiled potatoes,
● 100 grams of chopped onion,
● 1 tbsp. chopped chili peppers,
● 1 tsp. chopped garlic,
● Vegetable oil for frying.

Directions:

Jackfruit should be kneaded, if it is not soft enough, heat it for 30 seconds in a microwave oven. Make a homogeneous mashed potatoes and jackfruit.

Heat a frying pan with butter. Fry onion, peppers chili and garlic until soft, about 2 minutes. Add the prepared mashed potatoes with jackfruit and cook over low heat for 2 minutes. Then cool in the fridge for half an hour (or leave overnight).

Preheat the oven to 200 degrees. Form the cutlets from the cooled mixture. Bake for 10 minutes in an oven or fry in a pan. You can also cook on steam and serve with paste or crisp bread.

Jackfruit Salad

5 servings

This salad can be called «from fire to the fire» — a combination of acute and mild tastes. It has an expensive ingredient — coconut cream, so salad is suitable for special occasions. The dish does not open immediately, it can be prepared in advance, for 1-2 days, and stored refrigerated.

Ingredients:

● 300 grams of sliced young unripe jackfruit,
● 300 grams of coconut cream (not to be confused with coconut milk),
● 100 grams of sliced tomatoes,
● 100 grams of red sweet onion,
● 2 tsp. grated ginger,
● 1 tsp. chopped chilli (spicy to taste),
● ½ tsp. white pepper,
● 1 tbsp. chopped green cilantro (coriander) or parsley.

Directions:

Place the jackfruit in the refrigerator for 10 minutes. Mix in the bowl all the remaining ingredients, except cilantro. Add the jackfruit and coconut cream, stir well and decorate with cilantro. Refrigerate and serve with noodles, tortillas or lettuce leaves.
