Cheesecake Recipe

Cheesecake with cherries, dried apricots and lemon zest.


For the dough:

• Fat cottage cheese — 500g.
• Butter — 100g.,
• Eggs — 4 pcs.
• Powdered sugar — 200g.

• Dried apricots (chopped) — 4 tbsp.

For the glaze:

• Butter — 1 tbsp.
• Sugar — 1 tbsp.
• Chocolate, ground — 50g.
• Milk — 2 tbsp.


1. Melt the butter in the oven. Wipe through the sieve cottage cheese, add yolks and steamed semolina.

2. Then pour the melted butter and add the lemon zest. To stir thoroughly. Add dried apricots and cherries, soaked in cognac and rolled in a semolina.

3. Connect the dough with whipped into a steep foam with proteins mixed with sugar powder.
